B.L.T. Salad With Basil
Mayo Dressing
1/2
pound bacon
1/2 cup mayonnaise
2 TBS. red wine vinegar
1/4 cup finely chopped fresh basil
4 slices French bread, cut into 1/2" pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon canola oil
1 pound romaine lettuce - rinsed, dried and torn
into bite-size pieces
1 pint cherry tomatoes, quartered
Place bacon in a large, deep skillet. Cook over
medium high heat until evenly brown. Drain,
crumble and set aside, reserving 2 tablespoons
of the drippings.
In a small bowl, whisk together the reserved
bacon drippings, mayonnaise, vinegar and basil
and let dressing stand, covered, at room
temperature.
In a large skillet over medium heat, toss the
bread pieces with the salt and pepper. Drizzle
with the oil, continue tossing and cook over
medium-low heat until golden brown.
In a large bowl mix together the romaine,
tomatoes, bacon and croutons. Pour the dressing
over the salad and toss well.

It
sounds simple enough, but towing a camper,
boat, trailer or another vehicle safely
involves a lot of know-how. Here are some
basic tips:
Learn the Lingo
Towing has a language all its own.
Despite what it sounds like, gross vehicle
weight rating (GVWR) is something different
than just the weight of a vehicle, for
example. GVWR is the combined weight of a
vehicle with all its passengers and cargo
added in, and it's a key number to know
before you start to tow. There's also gross
combination weight rating (GCWR). This is
the maximum allowable weight of the
loaded-up trailer and the tow vehicle - with
all its passengers and cargo, too-added
together. It's a key measure for you to
check to ensure you are not putting too much
of a burden on your tow vehicle and risking
costly damage. Tongue weight (TW) is another
odd term. It relates to the amount of
trailer weight that presses down on the
trailer hitch at the back of a tow vehicle.
Having too much or too little tongue weight
can affect the safe handling and driving of
your tow vehicle.
Use the Proper Vehicle
You need to know the tow capacity of
your vehicle and make sure it's
sufficient to tow the trailer, boat or
camper.

Reacting to the Scared Horse

You are riding ol' marmot down a
familiar road and notice that the "For
Sale" sign is gone from a nearby front
pasture. You are wondering what kind of
horses the new folks have, when suddenly
four huge, shaggy, ungainly creatures
come galumphing toward you in a bizarre
sort of gallop. Your horse freezes in
horror, eyes bulging, his body crouching
slightly as he prepares for a rapid
retreat.
Evidently the new neighbors raise
llamas.
Or maybe you've lined up in the park for
the start of a competitive trail ride.
Your horse has successfully trained and
competed over long distances, and seems
well prepared for anything the rugged
terrain might afford. But just then, the
circus setting up across the road starts
unloading the elephants.
Or maybe an 18-wheeler suddenly barrels
down your normally quiet road, spitting
gravel as it comes toward you and your
alert, sensitive mare. As the truck
roars by, the driver leans out the
window and yells, "Pretty horse!" then
lets loose with a blast from his air
horn.
If you do much of anything on
horseback, chances are good that you and
your horse are going to encounter things
that are unexpectedly exciting. It could
be anything-a baby stroller being pushed
around a corner at the fairgrounds, a
longhorn steer loitering in the shade of
a nearby haystack, a pheasant bursting
from a hedge-or just a scary boulder on
the trail.
