Gaucho Guacamole
2 large ripe avocados (about 1-1/2 lbs.)
halved, pitted & peeled
1 tablespoon fresh lime juice
1 ear of fresh corn
1 plum tomato, seeded, diced
2 green onions, chopped
1 canned chipotle chile, finely chopped*
1/4 cup sour cream
Mash avocados with lime juice in medium bowl.
Using sharp knife, remove corn kernels from cob
and add to avocado mixture. Stir in tomato and
green onions.
Combine chipotle and sour cream in small bowl;
whisk to blend. Stir cream mixture into avocado
mixture. Season with salt.
Forget placing the avocado pit in your
guacamole - unless you like how it looks. It
doesn't stop the dip from turning brown.
Do ahead: Can be
made 4 hours ahead. Place plastic wrap directly
onto surface of guacamole and refrigerate. Bring
to room temperature before serving.
*Chipotle chiles are dried, smoked jalapeņos
canned in adobo sauce.

Horse Tips
There are so many of you out
there with tried-and-true tips that
might help others. We thought we'd
publish a few each month:
1) Scrub your water troughs with
plain bleach and rinse well. When you
refill, pour a 1/2 cup to one cup of
bleach into the water. It makes it only
slightly chlorinated and retards the
growth of algae and the horses drink it.
2) Use Walmart generic Metamucil
(unflavored) instead of the expensive
Sandclear to help prevent colic. Two
tablespoons mixed with grain and a
little corn oil twice a week.
3) Corn Oil - another good thing. Great
for disguising powdery substances in
grain, such as meds or Metamucil. Also
great for horses that tend to spill
grain as it helps to glue it together.
