CARAMEL APPLE PIE (Single Serving)
 Ingredients
One 17.3-oz. pkg. frozen puff
pastry sheets (2 sheets), thawed (found in
freezer section of grocery store)
4 med. Granny Smith, Jonagold, and/or Fuji
apples, peeled, cored & thinly sliced
2 TBS packed brown sugar
3 TBS butter, cut up
1/2 cup caramel-flavored ice cream topping
1 egg yolk, lightly beaten 2 TBS granulated
sugar
Whipped cream
Directions
1. Unfold pastry sheets onto
a lightly floured surface. Arrange eight* 4"- to
5" individual quiche dishes, pie plates, or
individual shallow casserole dishes atop pastry
sheets, top sides down. (If the pastry sheets
are not large enough for all the dishes to fit,
roll out the pastry sheets until they are large
enough.)

FLOOD & HURRICANE SEASON REMINDS
HORSE OWNERS TO HAVE A PLAN
With hurricane season in full swing, here's
a reminder to have an evacuation plan set up
for your horses - even if you board them.
If you live in an area that's prone to
natural disasters, such as flood, fire,
tornado or hurricane, have a plan in
place for what to do should the call go
out to evacuate. And remember to share
it with family, friends and the
caretakers of your horses.
The first step is to have all of your
paper work in order. Collect your
horse's negative Coggins (get one
annually) his brand inspection, his
passport, ownership papers and microchip
card in one place and always keep it
there. If necessary, purchase a
fire-safe box for these items, or store
them in a safe-deposit box at the bank
with the rest of your important personal
papers.
Take pictures and videos of your horses
to make them easy to identify. Store
visual identification tools with your
important papers.
Keep your horse trailer in working
condition at all times. You won't have
time to change that flat tire or fix the
door latch if you have to evacuate.
Also, teach your horses to load quickly
and easily.

CHANGE YOUR HUSBAND'S ('er, I mean
 Horse's)
ATTITUDE!
Sometimes horses just have a bad day, but
other times horses get like they do when
we need a vacation.
When your horse sours on his job, how can
you change your horse's attitude?
Josh Lyons changes his horse's
attitude by using the principles of
correcting the horse's thought instead of
his action and getting the horse to do his
job in a way to solve any type of sour
problem, from a refusal to go into the arena
to refusals to leave a buddy or go onto the
trail.
"If a horse doesn't want to go into the
ring, he's either mad about it or
nervous about it," Josh said. "So we
already know the thought-he doesn't want
to go into the ring."
Josh suggested that our first job is to
consider whether there's anything that
we're doing to cause him to feel that
way. Perhaps we're too aggravating with
our cue, or maybe we're tense and
sending him confusing or demanding
signals.
