COUNTRY FRIED STEAK
Ingredients:
1# top round steak, about 1/2" thick, cut in 4
equal portions
Vegetable oil or shortening, for frying
1 cup buttermilk
1 teaspoon Tabasco Sauce
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cups milk
Dash ground cayenne pepper - or to taste
(optional)
Salt and pepper - to taste
Preparation: Using the pointed side
of a meat mallet, pound the steaks to tenderize
them, then use the flat side of the mallet to
pound them to about 1/4-inch thick.
In a deep
cast iron or heavy skillet, melt
shortening over high heat to a depth of about
1-1/2" - 2". Heat to 370°. In a shallow
bowl, mix the buttermilk and hot pepper sauce.
In another shallow bowl or pie plate, combine
the flour, 1 teaspoon salt, and the pepper and
mix well.
Dip each steak in the buttermilk, then the flour
mixture. Reserve 1-1/2 tablespoons of the flour
mixture and set aside.
Two at a time, deep fry the steaks, turning
once, until nicely browned on both sides, about
3 to 4 minutes. Transfer to paper towels to
drain then place on a foil-lined baking sheet
and keep warm in warming drawer or 200° oven
while making gravy.
Discard all but 1-1/2 tablespoons of the fat
from the skillet. With skillet over low heat,
whisk in reserved 1-1/2 tablespoons flour
mixture. Stir until smooth and bubbly, scraping
up browned bits from the bottom of the skillet.
Whisk in the milk and ground cayenne, if using,
and bring to a simmer. Simmer for about 3
minutes, or until flour taste is gone. Season
with salt and pepper to taste. Serve the steak
with the gravy. Makes 4 servings.

WHEN GOOD HORSES GO BAD

I
believe there are no bad horses,
just horses with bad training. I
am often approached by owners
with horses that are presenting
an array of behavioral problems.
Some buck, others rear, still
others, bite, kick, weave, crib
and head shake. All of these
owners wanted to know what
caused their good horse to go
bad. When these unwanted and
potentially dangerous behaviors
are expressed we ask how did it
happen? Was it the horse, was it
someone else or was it the
environment which they live in?
They wondered if their
conflicted horses could be
fixed, changed, and
rehabilitated back to the green
zone. Each time I answered with
a resounding, YES!
No horse is beyond
rehabilitation. By utilizing
proper training techniques all
bad or conflicted behavior can
be changed.

YOUR HORSE'S BAD BEHAVIOR MAY BE
TRIGGERED BY SOMETHING YOU DON'T EVEN
DETECT
Horses are naturally
willing, generous, and
forgiving to those that they
trust. We could learn
alot from our horse's
"forgive and forget"
behavior; how many times
have you accidentally
spooked your horse, or moved
your hand without realizing
your horse was right behind
you? I don't know
about you but I know I've
done it several times.
I feel bad about it and I
try to let my horse know
that I'm sorry, and wouldn't
you know...he just looks at
me like "ok, I'm over it,
what are we going to do
now?"
When you have a good
relationship with a horse
and suddenly they do
something that you perceive
as bad behavior, chances are
your horse knows something
you don't. I'm
sure many horse owners know
what I mean when I say
horses seem to have a sixth
sense...and no, I don't mean
they see dead people.
However, horses can easily
detect our moods or shifts
in the weather that suggest
a storm is coming.
Whether horses are just very
good at picking up on human
behavior, or they really can
sense our emotions, it can
make them react in many
different ways. For
instance, horseback riders
are always told to get right
back up on the horse after
they fall off. This is
because if they do not get
right back on chances are
they will feel fear next
time they get on that horse,
or maybe even any horse.
Fear and nervousness are the
emotions that can make a
horse react in a spooky - or
even dangerous -
manner when they pick up on
it. The horse will
react in a way that will
scare the already fearful
rider even more and often
times riders who do not
understand the horse will
assume that the horse is the
problem.
This would be the wrong
assumption of course,
because the horse is only
reacting to the rider's
fear. The horse has no
idea that the rider's fear
is either of falling again
or of the horse itself and
the horse assumes that the
rider's fear is caused by
some unseen predator.
If you assumed that Godzilla
was going to suddenly
appear, snatch you up, and
eat you...wouldn't you act a
lil' crazy too?
Never forget that horses in
the wild are prey animals,
because that fight or flight
response will always be
there. Whether our
emotions are the culprit or
the scary horse-eating
broom, even horses that are
raised in captivity have
this survival response.
